Warm Winter Recipes-Medovik
This recipe is a continuation of the Warm Winter Recipes article from the December 2022 print issue. A honey based layer cake common in Eastern-European cultures; usually served with honey and strawberries.

Medovik:
Ingredients:
“Cake” layer ingredients:
- ¼ cup honey
- 3 eggs
- 2 tbsp butter
- 3 cups flour
- 1 tsp baking soda
- ½ cup sugar
“Frosting” Ingredients
- 30 ounces sour cream
- 1 cup heavy cream
- 1 ½ cup powdered sugar
Directions:
Cake:
- Beat eggs together with a fork and set aside.
- Melt together butter, sugar and honey together in a saucepan over low-medium heat. After melted, remove from heat.
- Add in eggs and mix constantly.
- Add baking soda, then fold in the flour until a dough forms.
- On a floured surface, roll out dough circles into about 10” in diameter. Use a knife or pizza cutter to make perfect circles. **SAVE SCRAPS OF DOUGH**
- Repeat step 5 until all dough is used except for unusable scraps.
- Bake the honey “pizzas” separately in the oven on a baking sheet lined with parchment paper at 350℉ for about 4 minutes or until golden.
- Once all layers are baked, let cool completely on a cooling rack.
- Now, bake the scraps(they don’t need to look pretty and these can be a little crispy. In fact, I encourage it to give the cake more texture and crunch).
- Crush the scraps once they are baked until they are a coarse grainy texture(they don’t have to be a uniform size of grain).
Frosting:
- Beat heavy cream until it can hold peaks.
- In a different bowl add powdered sugar and sour cream and whisk it together until combined and smooth. Fold into the heavy cream mixture.
- Combine, then chill in the fridge.
Assembly:
- Stack the cake layers with the frosting in the middle until out of layers.
- Then cover with frosting on the exterior as well(not too much though or it will be a mess).
- On top of the frosting covered cake, pat on the leftover “crumbs” until no white is showing.
- Serve with strawberries and honey (or don’t) and enjoy!
